Minerals
While they contain all the essential dietary minerals, rutabagas are especially high in potassium and three trace minerals. They deliver 10 percent of the daily value of magnesium and phosphorus. Rutabagas are an excellent source of vitamin C, with one cup providing 53 percent of the recommended daily value. Vitamin C is an effective antioxidant that is also needed for the production of collagen and the neurotransmitter norepinephrine. Rutabagas also provide 4 percent to 9 percent of the B-vitamins.
Phytochemicals
Like all members of the cabbage family, rutabagas contain plant-based chemicals called isothiocyanates. These sulfur-containing compounds are responsible for their characteristic sharp taste, but they also serve an important health benefit
. They may help remove potential cancer-causing agents from the body, thus possibly preventing some types of cancer, reports the Linus Pauling Institute. Isothiocyanates are best obtained from raw cruciferous vegetables because they can't be absorbed as well after the vegetable is cooked.
